Serves
You’ll need:
- 3 boiled eggs
- 1 tsp njh Mothership’s Meat/ Seafood/ Veg Mix
- 1/2 tsp njh Hot Travelling Chillies
- 1/2 tsp turmeric
- 1 onion, medium, sliced
- 3 sprigs curry leaves
- 1 tbsp coconut oil
Method:
- Take a wok and heat up the coconut oil. Add the onions and nicely brown them. Personally, I prefer almost dark brown as it adds to the final taste. Add the curry leaves
- Once they are set, add the njh Mothership’s Meat/Seafood/ Veg Mix and the njh Hot Travelling Chillies. Mix it. Once it’s roasted, add the salt. Add eggs and roast it well. I like it when the white gets a second skin from the roast and the yellow mixes up mostly with the onion mix.
